Ding secured a narrow 6-5 victory over his rival to book his place in the last eight.
Breaks of 107 and 106 helped the 38-year-old to victory despite his opponent producing a maximum 147 of his own.
Having started the day on a career total of 698 centuries, Ding is now the eighth player to reach the 700 mark.
He joins Ronnie O’Sullivan, Judd Trump, John Higgins, Neil Robertson, Mark Selby, Stephen Hendry and Shaun Murphy in the elite club.
The former world no.1 turned professional in 2003 and has since won 15 ranking titles.
Those victories include two wins at the Shanghai Masters in 2013 and 2015 respectively.
His win over Zhang has already guaranteed the Dragon £35,000 in prize money from this year’s event.
He can double that figure with a victory in the quarter-finals later this week.
Ding will face either Zhao Xintong or Chris Wakelin for a place in the last four.
As well as his pedigree at the Shanghai Masters, Ding is also a former World Championship finalist.

However, his only appearance in the showpiece contest at the Crucible ended in defeat.
He was beaten 18-14 by Selby back in 2016 having failed to recover from losing the first six frames.
Who has the most century breaks?
Ding is the eighth player to amass 700 career centuries, but has some way to go to top the all-time list.
O’Sullivan is the current leader for breaks of more than 100 with 1,282.
The Rocket’s nearest challengers are Trump and Higgins, the only other players to have surpassed the 1,000 mark.
Trump and Higgins have 1,092 and 1,036 to their name respectively.
